Tomato Salad with Red Onion and Mozzarella

Versatile and easy to prepare, this simple salad of tomatoes, red onion and mozzarella bursts with vibrant colours and delicious Italian flavours.

Recipe Ingredients:

8 ripe plum tomatoes, sliced
6 cherry tomatoes, halved
1 small red onion, peeled and sliced
1 handful basil leaves, torn
Extra virgin olive oil, to drizzle
Salt and freshly ground black pepper
2 handfuls of wild rocket leaves
Balsamic vinegar, to drizzle
2 balls of half-fat mozzarella, torn

Recipe Methods:

1  Place the tomatoes, onion and half of the basil leaves in a bowl. Drizzle over plenty of olive oil, season well, and toss through.
2  Arrange the rocket leaves on a serving platter and drizzle over a little oil and some balsamic vinegar. Season and spoon over the tomato and basil mixture. Add the torn mozzarella. Scatter over the remaining basil leaves, and drizzle again with a little oil and balsamic vinegar. Serve immediately.
