Versatile and easy to prepare, this simple salad of tomatoes, red onion and mozzarella bursts with vibrant colours and delicious Italian flavours.

Recipe Ingredients:
8 ripe plum tomatoes, sliced |
6 cherry tomatoes, halved |
1 small red onion, peeled and sliced |
1 handful basil leaves, torn |
Extra virgin olive oil, to drizzle |
Salt and freshly ground black pepper |
2 handfuls of wild rocket leaves |
Balsamic vinegar, to drizzle |
2 balls of half-fat mozzarella, torn |
Recipe Methods:
1 Place the tomatoes, onion and half of the basil leaves in a bowl. Drizzle over plenty of olive oil, season well, and toss through. |
2 Arrange the rocket leaves on a serving platter and drizzle over a little oil and some balsamic vinegar. Season and spoon over the tomato and basil mixture. Add the torn mozzarella. Scatter over the remaining basil leaves, and drizzle again with a little oil and balsamic vinegar. Serve immediately. |
