These meatballs are a versatile choice and a simple one, too. Serve with salad for a quick lunch that’s low in carbohydrate, or with couscous or rice.

Recipe Ingredients:
14 oz (400 g) minced lamb |
1.75 oz (50 g) fresh white breadcrumbs |
1 egg, beaten |
1 tsp ground cumin |
1 tsp paprika |
1 handful mint leaves, finely chopped |
Salt and freshly ground black pepper |
2 oz (60 g) crumbled feta cheese |
2 tbsp sunflower oil |
Couscous, to serve |
Recipe Methods:
1 Mix together the minced lamb, breadcrumbs, egg, spices and mint, and season well. Gently mix in the feta cheese. Cover and chill for 30 minutes. |
2 With damp hands, shape walnut-sized balls with the lamb mixture. |
3 Heat the oil in a large frying pan and fry the meatballs over a medium heat for 5-7 minutes, until browned all over and cooked through. Serve with couscous. |
